In 2014, the Danish brewery Teedawn was the first craft brewery in the world to go all-in on non-alcoholic (NOLO) beer, heralding a new era for beer.
Now, we're taking the next step in our mission to change the alcohol culture and include more people in the community. When Teedawn creates non-alcoholic products, we do so with unwavering commitment. We've partnered with France's and Germany's most respected and dedicated winemakers, who share our passion for quality beverages without alcohol.
Good non-alcoholic wine isn't something you produce without care. Our partners are carefully selected based on several criteria that ensure a great sensory experience without alcohol. This includes the age of the vines, climate and soil conditions, rainfall, regional traditions, the revival of 100-year-old technology, production methods, working conditions, collaboration between winegrowers and winemakers, craftsmanship, innovation, and, of course, historical roots.
The wines are based on a 'mother wine' containing 12-14% alcohol. The grapes are grown, harvested, pressed, and fermented within the shortest possible distances.
When it makes sense, the wine is aged in both steel tanks and handmade wooden barrels. Then, the winemaker skillfully blends different grape types and vintages until the taste and character represent the highest possible quality, with attention to taste, aroma, color, quality, viscosity, and naturalness.
Once we've created the perfect 'mother wine,' we gently remove the alcohol using a vacuum distiller as big as a house and as expensive as a beachfront property. It's a time-consuming and costly process, but it's still our preferred method. It undeniably provides the best and most natural result, as taste, aromas, structures, tannins, juiciness, crispness, and fruitiness are largely preserved.
As with traditional wines, microscopic amounts of dimethyldicarbonate, gum arabic, and sulfites are adjusted. This final process stabilizes the wine and ensures good durability. We are proud of the result.
