In 2014, Danish Teedawn was the first craft brewery in the world to go all in on NOLO beer. This ushered in a new era for beer.
Now we're taking the next step in our work to change alcohol culture and include more people in the community. When Teedawn works with non-alcoholic products, we do so with both hands firmly on the wheel. We've teamed up with France and Germany's most recognized and dedicated winemakers, who share our enthusiasm for quality alcohol-free drops.
Good non-alcoholic wine is not something you make with your left hand Our partners are carefully selected on a number of parameters that ensure a great sensory experience without alcohol. These include the age of the vines, climate and soil conditions, rain and water conditions, the region's traditions, the revival of 100-year-old technology, production methods, working conditions, collaboration between winegrowers and winemakers, craftsmanship, innovation and of course historical roots.
The wines are based on a 'mother wine' that contains 12-14% alcohol. The grapes are grown, harvested, pressed and fermented within as short a distance as possible.
When it makes sense, the wine is barrel aged in both steel tanks and hand-built wooden barrels. The wines are then blended by the winemaker, who expertly blends different grape types and ages until the taste and character are of the highest possible quality with an eye for flavor, aroma, color, quality, viscosity and naturalness.
Once we've created the perfect 'mother wine', we carefully remove the alcohol with a vacuum distiller as big as a house and as expensive as a beachside villa. It's a time-consuming and costly process, but our favorite. It gives indisputably the best and most natural result, as flavors, aromas, structures, tannin, juiciness, crispness and fruitiness are all preserved in abundance.
As in traditional wines, it is adjusted with microscopic amounts of dimethyl dicarbonate, gum arabic and sulfites. This final process stabilizes and ensures a good shelf life. We are proud of the result.
